Does this licence include "downgrade rights" so that I can, for example, upgrade an existing "Windows Server 2012 Essentials" to "2012 Standard" and then to "2016 Standard"?

Yes, the edition offers downgrade rights to a Windows 2012 Server Standard German (if media and licence key are available). But not to Windows 2012 Essentials, as it is a different edition (even if it is a "smaller" version). Since you seem to have licensed the Essentials Server correctly, it is possible to switch to Standard 2012 and then update to 2016 (where I would reinstall). Note: unlike the
