This pan is not easy to handle if you have never dealt with enamel before. I must have had to use it six or seven times to get half a feel for it. It is really necessary to follow the manufacturer's instructions and gradually increase the heat. Besides, the highest setting is absolutely never to be used. I usually use 6 out of 9, 7 for searing and 8 for very short, very hot searing, which I did once to get tofu really crispy. However, 7 is almost always enough for good caramelisation. Mushrooms in particular brown wonderfully compared to an aluminium pan. The heat is released so quickly that they don't juice before they've browned.
You definitely need more oil, but over time the amount becomes less, because when you fry the food it loosens up and you don't start wildly loosening and using more oil beforehand.
Burnt-on food can be easily removed by boiling it briefly with water and then wiping it off with washing-up liquid if soaking it with water has not worked. Most of the time, this is not necessary, but if something is burnt in, the effort is greater than with normal pans.
All in all, I am satisfied and look forward to the larger pan I ordered.
