No, the charging process on the side of the docking station cannot be interrupted. The docking station complies with all official PowerDelivery standards. According to these standards, the laptop is the main device that requires / orders how much power it needs from the docking station.
However, modern batteries and laptop electronics may choose not to charge the battery. Many laptop manufacturers have set a limit (around 90%) when the laptop will not charge the battery if the capacity exceeds this limit.

But modern batteries and laptop's electronics may decide not to charge the battery - many laptop's manufacturers decided a limit (around 90%) when the laptop will not charge the battery if capacity is over that limit).
