Ooni Karu 12 Pizza Oven
Pizza oven wood
First I ordered the Ooni Fyra, because the Karu was not available. I was moderately satisfied with this one. It can only be used with hardwood pellets, otherwise it smokes too much. We have also tested it with pellets from the Landi (softwood) with these he smokes strongly and the pizzas tasted bitter. It should be noted that hardwood pellets are very expensive.
The Karu should be used with hardwood (we use beech). This is available cheaply everywhere. Usually it must be chopped even smaller and cut to length. Otherwise one is again dependent on the gilded beech wood (eight irony) of Ooni.
The operation is very simple. Wood in the fire basket and light. Best with a wood wool grill starter.
Then heat up for about 20 minutes and always add wood.
After the mentioned 20 min. shoot the pizzas (best is to use an aluminum pizza shovel) and turn the pizza every 15 sec. After four turns the pizza is ready.
Initially, we had the problem that the topping was not yet properly through - but the pizza base was already burned. That was of course annoying. But perhaps we have practiced too little. Anyway, we have now retrofitted a Biscotto Saputo pizza stone. With this, pizza baking is easy.
Well, what else do you need for the pizza oven?
- Hardwood, lots of
- pizza shovel (I would take one made of metal with holes)
- possibly another pizza stone
- some patience and practice

Super device, needs a little practice, but then, just like at the Italian restaurant. :-)
It is recommended to still have an infrared thermometer so that you have the temperature under control
