Does the eSIM work at all with the watch in Switzerland? I heard somewhere that it doesn't work.

Galaxus does not (yet) support this service, it says on my eSIM management from Huawei Health.

I had also heard of it, it seems, with Sunrise
but I have never had it; so I cannot confirm that it works
