The book "Estimation of Lycopene Content in Tomato Varieties and its Products" offers a comprehensive analysis of the lycopene content in various tomato varieties and their products. Lycopene is a significant carotenoid found in tomatoes, known for its strong antioxidant properties. The study examines fresh tomatoes as well as thermally processed and commercial products such as sauce, ketchup, and puree sourced from the Thiruvananthapuram region. By applying a simple spectrophotometric method, the lycopene content is precisely determined. The results reveal a range of lycopene concentrations in the samples studied, which are important for commercial use. Furthermore, it is recommended to consume tomato products daily to reduce the risk of chronic diseases.
