I already have a dimmable switch on my lamp, do I have to leave the lamp on full brightness all the time for the bulbs to work?

Yes, it would even be advisable to remove the dimmer and install a normal switch.

Depending on how exactly the Hue lamps are to be used, they must have power all the time, even when they are off. The control system is located in the lamps/lamps themselves.
