The large chef's knife is designed for coarse ingredients. The blade of the filleting knife is flexible, allowing you to effortlessly fillet fish. Clean the blades with warm soapy water or under warm running water. Remember to dry them thoroughly to avoid oxidation spots. Oxidation is always possible if the knife is not properly cleaned. Global knives have a 15-17 degree angle. For this reason, they maintain a longer sharpness than a traditional European knife, which has an angle of 20-22 degrees.
