Manufactured from 32 layers of corrosion-resistant Damascus steel, the Kai chef's knife from the Shun Premier Tim Mälzer series is refined with a hand-finished hammered surface - known in Japan as Tsuchime - combining timeless aesthetics with ultimate sharpness. The blade of the Kai chef's knife has a solid VG-10 steel core with a hardness of 61±1 HRC. Analogous to the limited anniversary knife, the Tim Mälzer series also placed great value on optimum grip in addition to extreme hardness.
