Product details

Aesthetics have always played a central role in Japanese cuisine. The appearance of a dish and its arrangement on the plate are just as important to the enjoyment as the taste and aroma. In the kitchen, Japanese chefs place just as high demands on aesthetics as they do on functionality. With the MIYABI 5000MCD series of knives, ambitious home cooks and professional chefs have precision tools that are perfect in function and ergonomics and absolutely unique in design.

The fine Santoku knife from the Miyabi 5000MCD series represents the finest Japanese craftsmanship and is based on the tradition of Far Eastern aesthetics. The fine Damascus pattern recalls the swords from Japanese tales, and this particular knife is extremely sharp. One hundred layers of steel surround a core of MC63 MicroCarbide powder steel. The blade is hardened in a specially developed Cryodur process, making it extremely robust.

The Santoku knife is an aesthetic masterpiece where modern materials and traditional methods come together in perfect harmony. The classic Japanese Honbazuke sharpening gives the blade exceptional sharpness. Even in the 21st century, this relatively complex process, which consists of several grinding passes, is still done by hand to achieve an authentic result.

From the blade to the handle, the Santoku knife is unique. The natural structure of the birch burl used in the handle gives it a distinctive appearance. The polished wood fits comfortably in the hand thanks to the traditional D-shape, ensuring precise and fatigue-free cutting. The design is complemented by stylish details such as a pin with a Japanese mosaic. The straightforward appearance of the knife emphasizes its functionality and makes even complicated tasks with fish, meat, and vegetables easier.
