I have used this device for so-called onsen eggs (which are heated to 63° and not 57°) and it worked wonderfully. So pasteurising eggs should work without any problems. By the way, the operation is a bit complicated but once you understand it, it works.

Unfortunately, I have not found any information about possible programming. However, you can set a timer up to 99 hours and it has an exact temperature control up to 90° Celsius.
