Should the bread be stored in the Grandy with or without packaging/bread bags? How does it stay fresh longer?

Is there a suitable chopping board available for purchase that can be stored in the box?

I received the Wesco Grandy today. Unfortunately it's too big and doesn't fit in the intended kitchen niche. I couldn't see it in advance because the measurements are missing from the product description. I would like to exchange it for a smaller one. Is that possible? The Wesco Grandy is still in its original packaging.
