This Nakiri knife is pure craftsmanship from the blade to the end of the handle. It is flexible and designed so that you are one with the knife in the kitchen.
The core of the blade is ST650 powder steel and has a hardness of 62-63 HRC.

ST650, a modern classic
The ST650 series is inspired by the deep Swedish forests and represents the culmination of six years of work. When developing this knife design, our aim was to create an ergonomic handle that would be appreciated by beginners and experts alike, and the variety of handles makes this possible.
The steel itself is a work of art, characterized by its unique pattern on the blade and encasing our proprietary ST650 powder steel. By heating the Damascus blade, we have altered the layers of steel in the knife to reveal a stunning pattern. The core steel in the center of the blade is world-class quality, achieving a score of 820 when tested on the Catra steel sharpening test lab, and we have chosen a blade edge angle of 15° to make it easier to resharpen the blade when needed. The hardness of our blades ranges from 62-63 HRC, making them the hardest blades on the market. In addition, they are cryo-hardened, one of the most expensive and effective processes for maintaining the high hardness of a knife, which ensures exceptional durability.
The handle is made from French olive wood that has been carefully dried, moistened, dried, and moistened again until it reaches the desired hardness. Unlike pakka and micarta wood, it ages beautifully over time.
