However, all the information and videos I could find on this point refer to completely different (more fully automatic) models that have the corresponding menus (and display). Does anyone know whether the last point has to be done on the EC 685/the filter also works without it?

In my opinion, this input (filter present or not) is only used with the fully automatic machine to increase or cancel the time interval of the descaling process. So it should also work without specifying filter present or not above.
