There is a lot of information about the maximum quantity but none about the minimum quantity. How well can small quantities be processed? E.g. beating only one egg white or pizza dough with only 100g of flour?

It's not great for small quantities, it's not impossible, but not great honestly. You have to scrape a lot and have patience :)
