Vanilla is a climbing plant that is cultivated in Madagascar, Réunion, and the Comoros. The vanilla spice is obtained from its fermented capsule fruits. The flower of the vanilla plant is structured in such a way that it can only be pollinated by hummingbirds and certain insects. Therefore, artificial pollination with a small brush is necessary. Fresh vanilla fruit is odorless; it is only through a careful fermentation process that the dark color and aroma of the so-called vanilla pod develop. Vanilla is used as a spice, particularly for flavoring chocolate and cocoa.
