A 12VHPWR cable is supplied with this PSU, which goes from the GPU to 2 8-pin connectors for the PSU side. Can I use this for my Asus ROG Strix RTX 4080 OC Edition, as the supplied cable goes to 3 8-pin plugs for the PSU side? Should I be worried as the GPU cable is split into 3 connectors and the PSU cable is split into 2 connectors?

No, the cables are specially designed to be able to supply 600 watts, if the cable is included with the PSU, the rails are also designed for this.

For a 4080 it is certainly better if you use 3x 8 pin on 12vhpwr as it will then be supplied with sufficient power. I did this with my 4080 and never had any problems. I ordered the cables via cablemod. 2x 8 will also be enough. I once read that 2x8 can lead to crashes with 4080s.
