As a "business device", can the printer really not scan to email or scan to folder? 🤔

Yes, it can. There is "Scan to" network folder/FTP, email, computer, cloud, storage device and WSD. This can be set up in the web interface. Some services require software to be installed on the computer (EPSON Scan smart) or an EPSON connect account to be set up. For WSD, Windows must support this.
A clear purchase recommendation for frequent printers. You don't have to think about black and white or colour, the price per page is equally low. If you don't print that much, you should always print in colour (possibly streaking due to the print head drying out). I have two A4 devices with permanent ink in my company. Canon maxify 7050 and EPSON 8550.
The EPSON is the clear favourite because it is faster and somehow feels more professional.
