But PS4 Remote Play on the Mac doesn't work with the stick - so I can't connect the DS4 to this stick to play via PS4 Remote Play. Correct?

The 8bitdo stick must have the latest update (the updates can be downloaded from the 8bitdo website and there is a video on youtube showing the process).
