Yes, you can do that, no problem. Even when extended to this length, the frame is still sufficiently stable. It is certainly sufficient for hobby use.
I also use the 2.72 x 11m paper roll.
To fix the paper better to the pole and to prevent it from unrolling, I got some clamps. You can get them cheaply at a DIY store.
