Can I buy the code immediately and only redeem it in 2 months? Will I then also have two licences, as with the previous plan? Thanks in advance for the answers!

The current period is extended by one year. If you were to buy two licences and redeem them both now, your period would be extended to two years. I hope this clarifies your question.
