Can I have the Logitech MX Keys version with the Bolt dongle instead of the Unifying dongle? But then without a mouse (I already have the Logitech MX 3s mouse). Thank you very much!

The MX Keys S communicates with the Bolt and the older normal version with the Unifying

If I understand correctly, Unifying and Bolt are completely different products. Certain keyboards are compatible with Unifying, others with Bolt. See the link from Logitech:
