Can I just connect this headset directly to my Xbox controller (Razer Wolverine Ultimate)? Sound and mic will then work directly or does one cable go to the console and a chat cable to the controller? Has anyone else had experience with the combination Xbox one X + GSP 600 + Dolby Atmos?

This should work without any problems, it is a single cable that can be connected to the controller. I personally use it with the PS4 controller.
