Can I use this licence for several companies as long as they are all sole proprietorships or do I need an extra licence for each company? Do I have to enter a company name during installation or registration in order to be able to use the licence for the company in a legally secure way? If so, the licence would only be valid for this one registered company.

No, unfortunately not, this is only a single licence. It is best to contact Microsoft to find out whether they have a family licence.
