Not on an Xbox, but I recently got several of these things to connect my Nintendo 64, Gamecube and PlayStation. It works, but it's a tangled mess of cables because each converter needs an extra power supply. You also have to buy the HDMI cable separately. You would also have to accept that the picture quality of the consoles from the first quality is not the very best. For myself, however, it is sufficient.
