How likely is it that you can still get an old BIOS version here that doesn't support the 5000 series? The BIOS for the 5000 series is now about 6 years old so I assume I can assume that a Ryzen 7 5800X will run without an update?

There is a very low probability that you will receive a board with a BIOS that is too old. In most cases, a Ryzen 7 5800X will therefore run directly without an update. However, there is no 100% guarantee, as some older stock may be in circulation. Please note that the ASRock B550M Pro4 does not have a BIOS flashback.
