I have a PC with the motherboard "ASUS Maximus VIII Ranger ROG ATX". I would like to replace the power supply (Corsair 750W RM750i (80+Gold)) with a new part with 850 Watt. But which one fits the motherboard? Do the cables have to be changed? PC is 5 years old ....

No, as a rule nothing has to be replaced, the cables have remained the same over the last 5 years, at least the power cables. Since both power supplies are modular, you can simply unplug the cables of your 750W, remove them, plug in the new power supply and connect the cables. This works without any problems.
