I have an ASUS TUF GAMING B650-PLUS. For the WD Black SN850X 4 TB with heatsink (WDS400T2XHE-00BCA0), is it recommended to install it under the motherboard's M.2 heatsink, remove the motherboard heatsink and use the SSD's heatsink, or buy the version without a heatsink (WDS400T2X0E-00BCA0) instead?

You have 3 installation options here: Keep the included heatsink and do not use the heatsink from the motherboard, remove the included heatsink and use the one from the motherboard, or order one directly without its own heatsink. None of these options are wrong, but I would not remove the SSD's heatsink, so either just use the one from the SSD and omit the one from the motherboard, or order an SSD directly without a heatsink and use the heatsink from the motherboard.
