If I use the headset directly with the PS4 controller (only jack / without USB), do I still have 7.1 surround sound?

No. 7.1 can only be switched on if the headset is connected directly to the PS4 via USB.
However, the surround without 7.1 is quite good with this headset. it is definitely sufficient for Battlefield and CoD gaming.

It is not a true 7.1. It is simulated as long as the input produces at least stereo.
