No, it is definitely not possible to use the headphones without Bluetooth. And logically, noise cancelling also does not work without Bluetooth....

The answer above is wrong, the headphones offer noise cancelling even when you are not connected to Bluetooth. You can then change the type of noise cancelling (Ambient Sound or ANC) via the Haptic Touch buttons on the side of the headphones.
