Is the Logitech H800 compatible with Logitech Unifying and can therefore be connected via the existing USB dongle?

As far as I know no, the H800 has its own USB dongle and it is without the Unifying logo.

However, if you have a notebook with Windows 10, you can connect it directly via the control panel / devices with Bluetooth and the recognition is great.

The headset is also automatically reconnected after every restart.

If you move too far away and come back again, you may have to click on "Connect" again in the control panel / Devices.
