The only output is HDMI, so how do I get sound out if I don't want to connect the console to the TV, but to the projector and stereo system?

You need something like this --> Delock HDMI Stereo / 5.1 Channel Audio Extractor (Extractor)

You just have to pay attention to what your stereo system has for audio connections.

If you want to connect multiple sources to the projector, you could also use an HDMI matrix switch with audio output. --> Purelink PS420 3D HDMI Matrix

The audio signal goes via HDMI to the TV, so you would have to connect the audio output from your TV to the stereo system.
