What's going on with the RTX 2080 Ti? For weeks now, most models have said "Availability:Unknown". It's so super annoying. What's going on there?

The anger is, of course, absolutely understandable. :-( Unfortunately, we have to rely on our suppliers in such cases. As soon as we have information about the delivery time, we immediately state it on our website.
