The often more than 100-year-old family recipes are the culinary heritage of the pioneers and indigenous peoples of the North American continent. Diverse and close to nature, the approximately 150 vegetarian dishes from the cuisine of the Native Americans and immigrants are presented. Bread, breakfast, soups, main courses, and sweet delicacies, including cakes, provide a good insight into the traditional cuisine of North America. It becomes clear that the diet of the Native Americans was significantly more varied than commonly assumed. Even among the nomadic hunter tribes, surprisingly many vegetarian dishes were on the menu. Immigrants from the Old World had to adapt their eating habits to the harsh conditions of the vast continent, so vegetarian food was on the agenda much more often than one might think. A delicious preparation then became the only luxury.
