The Springer Handbook of Enzymes provides comprehensive information about enzymes that are well characterized. This second, revised edition contains concise and complete descriptions of approximately 5,000 enzymes and their areas of application. The data sheets are organized by EC number, and the volumes are structured according to enzyme classes. This new edition reflects significant advances in enzymology, as many enzymes have been reclassified or newly classified. Each entry is linked to references and one or more source organisms. Additionally, new data fields have been created that relate to applications and engineering, particularly for enzymes whose sequences have been modified. The total amount of material has more than doubled, resulting in the complete second edition consisting of 39 volumes and a synonym index. Starting in 2009, all newly classified enzymes will be addressed in supplementary volumes. The handbook is an ideal source of information for researchers in the fields of biochemistry, biotechnology, organic and analytical chemistry, as well as food sciences and medical applications.
