The color atlas covers the cultivated crops of field and vegetable farming grown in Europe. It also includes species that today are only represented by small cultivation areas but were often an integral part of agricultural use in the past. Only the most important species of forage plants are included, while grasses have not been considered. The representation of field vegetables is limited to plant species that were regularly cultivated in the fields. Organized by agricultural groups in the chapter, each species is described in terms of its botanical characteristics, origin, cultivation, and important properties.
