Edmund Oskar von Lippmann (1857-1940) was a German chemist, sugar technologist, and history of science scholar. From 1890 to 1926, he managed one of the largest sugar factories in Germany in Halle. He gained high international recognition with fundamental textbooks and manuals on sugar chemistry, as well as on the cultural history of sugar beets and sugar. In addition to his role as a refinery director, Lippmann was also an extremely productive researcher in the fields of sugar chemistry, chemical technology, and the history of chemistry. He published around two hundred scientific papers, including several textbooks and manuals. Among Lippmann's historical works, the notable one is the present work "History of Sugar, Its Production and Use, from Ancient Times to the Beginning of Beet Sugar Production" (First edition 18.
