Buckwheat, also called Haden in Carinthia, was named medicinal plant of the year in 1999. Since then, the versatile grains of the knotweed plant have made a strong comeback in kitchens. With their valuable minerals, vitamins, and unsaturated fatty acids, they strengthen the immune system and are regarded as mood lifters and slimming agents. After a brief introduction with interesting facts about this traditional pseudo-cereal, the author compiles 30 favorite recipes from 30 cooks in the cultivation area of the Neuhaus/Suha region of Carinthia, ranging from soups and main courses to desserts and pastries.
