There have been various books published about the production of Nuremberg gingerbread. However, these mostly focus only on the production of the brown gingerbread and lack any guidance on the making of the white gingerbread, which is baked on wafers, as well as the well-known round Elisen gingerbread, which is packaged in boxes or tin cans for shipping. For this reason, I have decided to describe the production of all Nuremberg gingerbread products in this work.
