Kaiseki is the refined and traditional haute cuisine of Japan, particularly cultivated in the ancient capital city of Kyoto. Kaiseki is served as a seasonal menu in eleven small courses. The food is delicate, highly aesthetic, natural, and simple. The simplicity cultivated by Kaiseki is considered a key to gaining an exemplary understanding of Japanese culinary culture in this study. The starting point of the study is specific dishes, such as a bowl of wakame seaweed and bamboo shoots, as well as products like Kamo eggplant or a fish called Tai. From these, a gastrosophical research approach is developed, observing chefs while they cook, fishermen on their boats, and farmers cultivating their vegetables.
