The concept of needs-oriented nutrition originated from the experience of the alternative practitioner Heinrich Tönnies (1936-2006), who specifically used foods to heal physical and mental exhaustion and to halt diseases. Through his keen observational skills and a good sense of the body, he was able to identify nutrient imbalances and cross-reference and supplement them with knowledge from biochemical and nutritional science literature. The knowledge compiled here largely comes from notes taken during his lectures and consultations, and has been supplemented by more recent findings as well as personal experiences in daily implementation of needs-oriented nutrition in family life. The recipe collection assembled in this work mostly originates from the resources of educational practice for children.
