The thought of sour cherries evokes a warm summer day in the mind's eye, a garden with that quirky, compact tree, its sprawling branches laden with dark red, almost black, glistening, somewhat glassy fruits. The soft flesh, the wonderfully tart flavor, the laughter of children - it carries a hint of nostalgia. This is likely also due to the fact that many sour cherry trees have had to make way for road expansions in recent decades, and the fruit, a long-unloved stepsister of the sweeter cherry, disappeared from vegetable stands. However, the focus of many gardeners has recently shifted back to this stone fruit, which has been rediscovered thanks to its hardiness, resilience, and not least its excellent fruit flavor. Currently, around 270 varieties are being cultivated, and their ingredients are valuable.
