Every day, millions of people in Germany are provided with meals through out-of-home catering, particularly through community catering. Social institutions must adhere to the same food safety and hygiene requirements as commercial kitchens. Officially, around 200,000 foodborne infections are reported in Germany each year, highlighting the necessity of complying with these standards. Vulnerable groups include children, pregnant women, the elderly, and immunocompromised individuals, who are predominantly served through community catering. The author imparts the necessary background knowledge for those responsible for meal preparation, handling, or distribution in all community catering facilities regarding hygienic food management.
