For offers in community catering, as well as for situations where cooking is done together with residents, patients, or clients, European and national legal frameworks of food law require internal measures and controls to ensure food hygiene. The German Caritas Association and the Diaconal Work of the Protestant Church in Germany have addressed this issue for all areas of social work according to the new legal regulations. In accordance with the requirements of Regulation (EC) on food hygiene 852/2004, a guideline for good hygiene practice has been developed, which is recognized nationwide by the state food monitoring authorities. This book focuses on stationary facilities with their diverse catering options (large kitchens, group kitchens, meals on wheels).
