This cast iron lid is the perfect complement to cast iron roasters with glass lids when the pot and lid are exposed to higher temperatures in the oven. It is also often useful to use a lid for cooking when braising in deep pans. Unlike glass lids, cast iron lids conduct heat and radiate it back. This gives dishes a particularly intense flavor.
