The Santoku is a Japanese chef's knife with a wide blade that has a slightly curved edge, while the tip of the spine is sharply bent downwards. The oval indentations on the sides reduce sticking while cutting and make it easier to release slices from the blade, as less metal surface comes into direct contact with the food. The Santoku is excellent for all types of chopping and slicing; for example, garlic potatoes can be quickly cut with the Santoku. The downward-pointing tip of the Santoku is less likely to jab into the hand compared to a traditional chef's knife. The blade length of 17 cm is sufficient to cut even large heads of cabbage.
