The blades of the Wüsthof Performer series are made from a single piece of chromium-molybdenum-vanadium steel (X50CrMoV15), are laser-etched on both sides, and are subsequently coated with DLC (Diamond-Like Carbon). This diamond-like carbon layer gives the knives a surface hardness of 104 Rockwell and is ultra-hard. Thanks to the lotus effect, the knife blade glides effortlessly through any food. The DLC coating (Diamond-Like Carbon), an amorphous carbon layer, is three times harder than steel. It is resistant to acids, alkalis, and high temperatures. This carbon layer makes the Wüsthof Performer knife resistant, extremely scratch-proof, and long-lasting.
