Do you have to preheat the stone in the oven? or is the heating capacity sufficient to keep the stone plate hot for longer? Or will the stone plate cool down at some point?

The stone does not need to be preheated. The stone stays hot for a long time after you turn off the oven. We have this grill and are very satisfied.
