Yes - the appliance continues to run at the point where it was switched off. Tried it myself by pulling the plug out and plugging it back in.

Yes, that's what I do. However, the compressor then has a switch-on delay of 2 minutes, which doesn't matter to me. (Protective function against switching on and off too quickly)

Yes, the appliance automatically resumes the previously set operation. This function is also used in the event of a power failure. :)
