So as soon as it has reached the set humidity, the compressor switches off but the fan continues to run, this is extremely tedious and not really smart in terms of power consumption, is this normal?

According to an enquiry at Kibernetik: Models with a mechanical hydrostat switch off completely. Models with digital hydrostat (like this one) keep the fan running.
